My in-laws catch the train from San Diego to visit us each month. In addition to seeing and loving on the grands, my father-in-law is also looking forward to my chocolate chip cookies when they come to town. I try and have homemade cookie dough in the fridge to be prepared for his visits. He makes such a big-to-do about them every time and I love it!
This weekend we got to celebrate his birthday and I was really torn. Although cookies are his favorite- I wanted to make a cake you know so we could sing and he could blow out his candle and all! Then I decided to incorporate cookies into the cake and my version of a cookie lover’s dream was born!
This cake incorporates chocolate chip cookies, Oreos and brownies! It’s rich and moist! Like the recipe says, it really is a dream.
Oh and I made sure to give him the slice with the largest chocolate chip cookie on top!
RECIPE
Ingredients for the cake: ( Box of yellow cake mix, 6 Oreo cookies, 3 eggs, 1 cup of milk, 1/2 cup of Greek yogurt, 1 packet of instant vanilla pudding mix and a 1/2 cup of vegetable oil),
Directions: Preheat your oven to 350 degrees. Grease three 6 inch cake pans with cooking spray. Put 6 Oreo cookies in a plastic bag and hit the bag on the counter several times until you have small broken pieces.
In a large bowl using a hand mixer beat all of the ingredients for a few minutes. Evenly pour the cake batter into the cake pans and bake between 35-40 minutes.
Ingredients for icing: ( I cup of vegetable shortening, 6 Oreo cookies (scrape out the filling), 1/4 cup of milk & 4 cups of powdered sugar.)
Ingredients for garnish: 6 small chocolate chip cookies (homemade or store-bought), 4 chopped Oreo cookies, 1 brownie (homemade or store-bought) and melted chocolate for drizzling.
Using a food processor pulse the Oreo cookies until they become fine crumbs.
In a stand mixer- cream the vegetable shortening and milk. Then add in the powdered sugar one cup at time. Finally spoon in the Oreo cookie crumbs.
I am going to provide a video tutorial for icing a cake in the future. Here are some items I highly recommend for icing your cake: cake decorating turntable, icing spatulas, cake boards.
Invert your completely cooled cakes onto an 8 inch cake board and put on the cake turntable. Using your off-set icing spatulas begin to ice the cake.
Next melt 4 oz of semi-sweet chocolate and put in an icing bag and drizzle around the top of the cake.
Using a star-shaped tip, pipe a border around the top and bottom of the cake.
Finally garnish the top of the cake with the Oreos, chocolate chip cookies and brownies. Drizzle remaining chocolate and Oreo crumbs to top the cake.
