I’ll be completely honest! It’s been more difficult this time around for making time to bake (inserts sad face emoji). Baking is therapeutic for me- I get to release my creative energy and make something beautiful and sweet for my family to enjoy. With three kids under 5 and all the traveling we’ve been doing lately- I haven’t had time for more than homemade cookies and I keep my fridge stocked with dough to save time. I am missing my kitchen lab. I feel like I am spending half the day trying to get Brielle down for a nap and the other half of the day, cooking, cleaning, trying to catch up on laundry and doing homework with the kids. Here’s where my spiced whoopie pie recipe comes in.
I actually make these cookies from a box of cake mix! Yes you heard me right. It does not get much easier than that! Just three ingredients for the cookie recipe. And I am going to share with you the best (addictive) cream cheese icing you’ve ever had! Because these are so easy to make I can squeeze them in on one of Brielle’s naps even if its just 20 minutes and satisfy my baking craving.
You can pretty up these fall treats by piping the cookie dough out into swirls called rosettes. Or you can use an ice cream scoop for a round shape if that’s easier. I pipe the icing so its even and pretty as well- or scooping the icing with an ice cream scoop will do the trick.

RECIPE:
- TOTAL PREP TIME: 15 MINUTES
- TOTAL BAKING TIME 10 MINUTES.
WHOOPIE PIE RECIPE
- 1 BOX OF SPICE CAKE MIX
- 1 LARGE EGG
- 1/2 CUP OF BUTTER
CREAM CHEESE ICING RECIPE
- 1 POUND OF CREAM CHEESE (SOFTENED)
- 1 STICK OF BUTTER SOFTENED
- 1 TABLESPOON OF VANILLA EXTRACT
- 4 CUPS OF CONFECTION SUGAR
DIRECTIONS
- PREHEAT OVEN TO 350 DEGREES. LIGHTLY GREASE BAKING SHEET.
- MELT BUTTER. THEN IN A STAND MIXER BEAT CAKE MIX, EGG AND BUTTER ON MEDIUM SPEED.
- USE A MEDIUM COOKIE SCOOP OR PIPE SWIRLS USING A STAR-SHAPED TIP AND ICING BAG ONTO THE BAKING SHEET TO MAKE THE WHOOPIE PIES.
- BAKE FOR 10 TO 12 MINUTES. MONITOR SO BOTTOMS AND EDGES DON’T BROWN. ALLOW COOKIES TO COMPLETELY COOL FOR 20 MINUTES
- WHILE COOKIES ARE BAKING MAKE THE ICING. BEAT BUTTER, VANILLA AND CREAM CHEESE IN A STAND MIXER OR HAND HELD MIXER. SCRAPE SIDES TO MAKE SURE ALL INGREDIETS ARE THOROUGHLY INCORPORTAED.
- SLOWLY BEAT IN THE CONFECTION SUGAR ONE CUP AT A TIME THEN INCREASE THE SPEED TO HIGH SCRAPING UP THE SIDES.
- REFRIGERATE THE ICING FOR 20 MINUTES (WHILE COOKIES ARE COOLING) SO IT’S STIFF AND CAN HOLD A SHAPE.
- PIPE OR SCOOP ICING ONTO A COOKIE AND TOP WITH AN0THER COOKIE TO MAKE SANDWHICHES.
