St. Patrick’s Day is Tuesday. With school closures and social distancing in place due to the Corona Virus, most of us will be celebrating St. Patrick’s Day at home. You can make the best of the situation and make these Shamrock St. Patrick’s Day Waffles right at home with your loved ones!!!

Like many of you, I am scratching my head and trying to come up with a game-plan for my boys ages 5 and 4 staying home from school with their baby sister and I for the next few weeks. Yes- cooking together will be one of the activities we can do together to have some fun while we’re indoors together. These Shamrock St. Patrick’s Day Waffles will be so fun for the boys to help me make. Especially mixing in a few drops of green food coloring- they are going to love that part best.

I made these Shamrock St. Patrick’s Day waffles using a heart shaped waffle maker I got on Amazon. You can get it from my Amazon store by clicking HERE. Three hearts together make a Shamrock. I also used a condiment dispenser to pipe waffle batter onto the griddle to make the stem! Finally I used tangerines, blueberries, strawberries and baby strawberries from my garden to assemble a bright rainbow over the waffles.

About the Shamrock

What is a shamrock anyways? According to Wikipedia, ” A shamrock is a young sprig, used as a symbol of Ireland. Saint Patrick, Ireland’s patron saint is said to have used it as a metaphor for the Christian Holy Trinity.” In addition to having little fun in the kitchen, I can also use the waffle-making experience to talk with the kids about our faith. The Recipe

As for the waffle batter- the recipe comes from my mother and truly this is the best pancake recipe I’ve ever had. Growing up, one of my favorite memories is my mother picking me up and setting me on the kitchen counter to help stir this recipe and lick the spoon. The only reason I even order pancakes from anywhere else is because I don’t feel like cleaning up and feel lazy sometimes LOL! You can easily double or triple this recipe to adjust it to feeding your family- the recipe makes 8 pancakes.

St. Patrick’s Day Shamrock Waffles

Equipment

  • heart shaped waffle maker

Ingredients

  • 1 cup all purpose flour
  • 3 tbsp sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 stick melted butter
  • 1 egg
  • 1 tbsp pure vanilla extract

Instructions

  • In a medium bowl, using a whisk, mix together the first 4 dry ingredients.
  • In a large bowl, using a whisk, beat together the remaining 4 wet ingredients
  • Pour the dry ingredients into the large bowl of wet ingredients and beat together with a whisk until the batter is smooth. (If making Shamrock waffles for St. Patrick's Day add a few drops of green food coloring to the batter and mix in.)
  • Use cooking spray on a heated heart-shaped waffle maker. Transfer batter into a measuring cup. Pour batter into waffle maker. Remove from waffle maker when done (about a minute).
  • Put together three heart shapes to make one shamrock.

Notes

Optional: Use tangerines, blueberries and strawberries to make a rainbow over the waffles.
