Alas- the Valentine’s season is officially over. But just because Valentine’s Day has come and gone doesn’t mean you have to stop spreading the love! Any day of the year is perfect to share a heart-shaped treat!

Since we went out for a romantic date on Sunday- we stayed in for Valentine’s Day and I cooked. Errol requested his favorite dinner meal: Pasta in a smoked-salmon vodka sauce with saute’d scallops. The boys had pasta and marina sauce. They were all happy campers! I managed to make this darling Valentine’s Pie pretty fast while the kids were napping! Remember to tag me if you try it out!

Recipe:

Crust: (2 cups of all-purpose flour, 2/3 cups of butter (cubed), 5-8 tablespoons of ice cold water, a dash of salt).

Using a food processor- pulse the flour & butter (butter should be frozen or very cold). With the motor running add in the water and salt- just until the dough gets crumbly. Stop machine and shape dough into 2 round disks. If it won’t roll in to a round shape you may need more water. Wrap dough into plastic wrap and chill for at least a half hour then then roll them out. You could always skip this step and buy store-bought pie dough!

Filling: (2 cups of  sliced strawberries, 1/2 cup of sugar, 1/4 cup of all purpose flower, the zest and juice of a medium-size orange, 1/4 cup of cinnamon, 3 tablespoons of nutmeg, 2 tablespoons of butter .)

In a medium bowl combine strawberries, sugar, flour, orange juice and zest as well as the cinnamon and sugar. Dot with butter

Transfer pie filling into pie crust and put in refrigerator.

Using cookie cutters- make Valentine’s designs with final disk of pie crust. Place dough on top of the pie filing. Press edges into secure pie.

Bake on 375 on a cookie sheet with foil for 60-70 minutes or until pie browns and juices are bubbling.
