So I haven’t written blog post in a few weeks because like many of you I’ve been adjusting to the new world we’re all living in. I’m homeschooling my 4 and 5 year old boys all while taking care of baby Brielle and keeping up with all the household needs of my family! And can we talk about the madness at the grocery store!!!??? A few days ago Errol went to three stores that were all out of eggs. I ended up trading my next door neighbor who has a hen- a bag of lemons from our tree for 8 of her hen’s eggs! The struggle is so real! That’s why I am excited to share my 30 minute pantry turkey chili and cornbread recipe with you. The best part about it is you likely already have the ingredients in your pantry and you can make the cornbread WITHOUT EGGS!
I’m also SO EXCITED to share that I’ve started a YOU-TUBE series to get us through weeks ahead called, “Quarantine Cooking Chronicles!” Of course the first recipe is the 30 minute pantry turkey chili and cornbread!

Spooky Owl Turkey Chili
Ingredients
- 1 pound lean ground turkey
- 1 clove garlic
- 1 handful baby spinach
- 1/2 cup chopped onions
- 1 tbsp garlic salt
- 1 tbsp Italian seasoning
- 1 tsp black pepper
- 2 tbsp ground cumin
- 15 oz can of crushed tomato
- 26 oz jar of marinara sauce or spaghetti sauce
- 16 oz can of kidney beans (water drained)
Instructions
- In a food processor pulse the spinach and garlic until minced. Transfer to a large sauce pan.
- Turn heat on to medium high for the large sauce pan. Add the ground turkey and onion with the spinach and garlic. Add all seasonings. Break ground turkey apart while it's cooking with a wooden spoon until the turkey is browned and cooked (7-10 minutes.) Drain excess fat from the pan.
- Add diced tomatoes, beans and marinara sauce. Stir the ingredients. Bring the sauce pan to a broil, cover and reduce heat to simmering for 5 minutes.
- Serve in a bowl. Optional: top with sour creme, sharp cheddar cheese and diced chives.
To Make The Spooky Owl Chili
- Bake store-bought crescent rolls according to the directions on a box. Set to the side.
- Spoon or pipe two large dallops of sour creme at the top of a bowl of chili. Then add black olived to the center of the sour cream dallops to make the eyes.
- Next take two crescent rolls and place them under the eyes at a diagonal to make owl wings
- Finally, using a knife with a sharp tip, cut out owl's feet and a beak from a slice of sharp cheddar cheesew
