Lately I’ve been using my charcuterie board for way more than cheese! My new hobby is making brunch boards. I tried to convince my husband we should get take-out for breakfast on Father’s Day but he insisted on a home-cooked breakfast so I made him the ultimate brunch board with all his favorite breakfast foods! He deserves it- he’s an amazing dad so I had to go all out! With just a few easy steps, you can learn how to make the ultimate brunch board too!

Brunch boards are great for the weekends as well as holidays! I made this one for Father’s Day to feed my family of 5 but it’s really a great idea for any gathering. You assemble your favorite breakfast goodies on a wooden board so guests can serve themselves. There’s no right or wrong way to make one. Here’s what I used in the brunch board below. The wooden board and cast iron skillet can be found on Amazon.
- a 20X30 wooden board
- a 6 inch cast iron skillet
- scrambled eggs or an omelet
- pancakes
- waffles
- A dish for syrup
- bacon
- sliced banana
- berries (blueberries, strawberries or blackberries would be perfect)
- grapes
- store-bought cinnamon rolls

I’ve inserted my pancake recipe below which I also use for waffles. Pancakes are the star of my brunch board so a good recipe is essential. I also made waffles on a stick by placing popsicle sticks inside of a heart-shaped waffle maker which the kids just love!
Portia’s Pancake Recipe
Ingredients
- 1 cup all purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup milk
- 1 egg
- 1 tbsp pure vanilla extract
- 1/2 stick melted butter
Instructions
- In a medium-size bowl, whisk together all the dry ingredients
- In a large bowl whisk together all the wet ingredients
- Pour the dry ingredients into the bowl of wet ingredients and whisk together until ingredients are thoroughly combined
- Grease a griddle with cooking spray and bring the meat to medium. Transfer batter into a Pyrex measuring cup and pour medium sized circles on pancake batter onto the griddle. Flip when the batter begins to butter. Allow to cook on the other side for 30 seconds then transfer to a plate.
- Serve warm with maple syrup and butter.
