On one of our family’s recent trips to Knott’s Berry Farm, my 7-year-old son Blake noticed the Knott’s Berry Farm Cookbook in the window of the marketplace as we were walking in! “Mommy you HAVE to buy the cookbook and make that pie” he said.

Since then, every time we pass the cookbook in the window he checks to see if I got it yet! Now that Knott’s Berry Farm’s Boysenberry Festival is here, I thought it would be the perfect time to grab the cookbook and surprise my son with his favorite treat and make a Knott’s Berry Farm Boysenberry Pie.

I’ll be honest. I was a little intimidated at making the pie. My family knows what a Knott’s Berry Farm boysenberry pie is supposed to taste like.  So, they would know if I fell short of the goal. And even though I bake and decorate pies regularly, I cheat and have gotten into the habit of buying store-bought pie crust to save time. I wondered if my pie crust would come out flaky, buttery and sweet like it’s supposed to. Well, I’m relieved to report my pie turned out just as good as the ones we eat at Knott’s -plus I put my own spin on the pie by decorating it.

Berry Market Place Items

One of the great things about visiting Knott’s Berry Farm is that you can shop in their marketplace and get special items that are ONLY sold at Knott’s Berry Farm. The Berry Market has the world’s largest selection of Knott’s signature jams, jellies, gourmet foods and gifts. Season pass holders can also use their discounts within the California Marketplace.

Here’s what I picked up from the marketplace to make and decorate my pie as well as few other items I just had to have as a Knott’s Berry Farm foodie.

    <p>I started by making the pie crust first and was relieved at how easy it was. I followed the directions in the cookbook and made two disks of pie crust in 10 minutes. I also have to add that I loved using my Knott’s Berry Farm Boysenberry Measuring spoons to measure the dry ingredients. They were so pretty and decorative.

**If you are going to add extra decorations to the pie then you’ll want to double to recipe and make 4 disks of pie crust: 1 for the bottom of the pie, one for the top of the pie, one to decorate the pie and the last pie disk can be refrigerated or frozen for later use.

The Boysenberry Filling

To make a Knott’s Berry Farm Boysenberry Pie, I followed the recipe for the filling with one exception. The recipe calls for 1 pound of frozen boysenberries which comes out to about one can. I used three cans of boysenberry for a fuller filling. It took about 5 minutes to mix all the ingredients together and it came out so delicious.

Assembling The Pie

Roll out the first pie disk onto a floured surface. Transfer the pie disk into a 9-inch pie pan. Fill the pie with the boysenberry filling. Then roll out the second pie disk and top the pie pan and filling with that. Cut away the loose edges. I always save the pie crust scraps because I use them to decorate the pie.

Decorating The Pie

I love decorating pies and have made specially-decorated pies celebrating my favorite Knott’s Characters in the past.

For this pie, I wanted simple decorations that would be easy to replicate. I used the Boysenberry Cookie Cutter that is sold in the berry market place.

Follow the easy steps below to decorate a boysenberry pie:

  • Roll out a disk of pie crust to make a Knott’s Berry Farm Boysenberry Pie.
  • Cut out boysenberries using your Knott’s Berry Farm Boysenberry Cookie Cutter
  • Add a few drops of purple food coloring to ¼ cup of water.
  • Use a paint brush to paint the boysenberry cut outs purple (optional, you could also skip painting the

Finally, bake and eat with a scoop of ice cream.

Now that I have the Knott’s Berry Farm Cookbook and have successfully made the boysenberry pie, my family has challenged me to continue baking the entire cookbook. It’s a tall order but I might be up to the challenge. Now you can make a Knott’s Berry Farm Boysenberry Pie.
