Seriously- who wouldn’t appreciate breakfast in bed when it’s this good (and pretty!)
I am a pancake connoisseur! I mean I live for a good breakfast that culminates with pancakes as the grand finale!
Lincoln Restaurant in Pasadena serves up a mean short-stack. But honestly I haven’t had any restaurant pancakes that even come close to this recipe passed down to me from my mom who still makes them almost every Sunday for brunch!
Recipe: makes 10 -12 pancakes.
(Dry ingredients: one cup of all-purpose flour, 3 tablespoons of granulated sugar, 1 tablespoon of baking powder and a dash of salt)
(Wet ingredients: One cup of milk, half a stick of melted butter, one egg and one tablespoon of vanilla extract)
Directions:
Combine all dry ingredients in a bowl. In a separate bowl whisk together all wet ingredients. Then whisk together all ingredients until batter is thoroughly mixed. Transfer 1/4 of the batter into a condiment dispenser- you can get one from your local grocery store. Then on a griddle set to medium heat that has been greased with cooking spray pipe heart shapes. You can fill in the middle of the heart shapes with batter from the dispenser or you could use the remaining batter and pour in the middle with a Pyrex measuring cup. Once the batter starts to bubble flip the jacks! Stack them and garnish them with melted butter, syrup and berries!
