So recently I’ve developed an obsession with cast iron skillets. I use miniature ones in my breakfast grazing boards for omelettes or scrambled eggs. I also started searing fish, steak and chicken in them and finishing them off in the oven. My cast iron skillet dinners are just so tender and moist. Well last night I made my first ever dessert in one this week and my cast iron skillet berry crumble did not disappoint! Yum Yum!
So Why Use A Cast Iron Skillet Anyways?
According to Bon Appetit‘s skillet guide, “When you heat fat in cast iron over high heat, the fat molecules bond themselves to the pan and transform into a hard nonstick surface. Even pans labeled as pre-seasoned benefit from this process, as heating more layers of fat only improves the nonstick properties.” In other words the more you cook in your cast iron skillet, the more seasoned it is and the more layers of skillet it creates.
Cleaning Your Cast Iron Skillet
It’s super important to properly clean your cast iron skillet. Don’t put it in the dish washer whatever you do. Use a cast iron skillet scrub brush (got mine on Amazon) and hot water to clean your skillet after cooking. Dry your skillet and rub it in a light coat of vegetable oil or shortening. Bake it upside down in the oven on 375 degrees for an hour. Place foil beneath the pan to catch any oil drippings. After completely cool lightly grease once more before storing.
Back to the Cast Iron Skillet Berry Crumble.
So back to the berry crumble! This recipe is easy and quick to prepare. You can use any assortment of berries even frozen ones. You will need either a stand mixer or hand mixer to make the crumble. I like to imagine this dessert is somewhat healthy due to the fact that it has oats and berries as the key ingredients but I digress lol! I love the addition of orange zest to most of my berry desserts but you can feel free to omit that if orange zest is not your thing!

Cast Iron Skillet Berry Crumble
Equipment
- cast iron skillet
Ingredients
Berry Base
- 5 cups fresh berries
- 1 zest of orange
- 1/4 cup fresh squeezed orange juice
- 1/2 cup granulated sugar
- 1/2 cup all purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
Crumble Topping
- 1 cup all-purpose flour
- 1 cup oatmeal
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 sticks cold butter (cut into small cubes)
Instructions
- Preheat oven to 375°F.
- In a mixing bowl, toss together berries, orange zest and juice, sugar, flour, cornstarch and salt. Smooth berry into an even layer. Transfer berry mixture to a 10 inch cast iron skillet.
- Spread topping evenly on top of berry mixture with spatula.
- Bake for 40 to 45 minutes until berry juices are bubbling
- Serve warm with ice cream
