What do you make your dad and husband for Father’s Day brunch after they spent the morning playing 18 holes of golf? Amongst other things a quiche that declares they’re the, “Best Dad By Par,” pun intended! Oh and you top it with a never used golf tee and golf ball for good measure! Keep reading- the recipe is at the end of the post! bestdad1I spent the day reflecting on some of the ways my father has loved me best so I’ll briefly share how that love literally sunk beneath my skin and into my blood and has given me life. bestdad5.jpg

I had to wait till I turned 15 to be allowed to officially have a boyfriend. It seemed cruel and unfair- so many of my friend’s were allowed to date at much younger ages. So when the time finally came my parents had a few rules- one being you could only entertain male company in the living room- bedrooms and private spaces were off limits. Second rule was my dates had to leave by 10pm sharp. My father was an early sleeper. He’d be in the bed and sleep by 9- but if I had company he’d set his alarm for 10pm and he’d check every time to make sure the guy had left. If my company dared to visit longer than 10:01 pm my father would put on his bathrobe and walk in the living room and kindly but firmly tell him, “partner it’s time to go!” Bahahahahahaa!!! I was so embarrassed!!! Now as a grown woman those are some of the fondest memories I have of my father. What he did  for me was transformational. The way my dad honored me and taught me to honor myself is an unspoken message that sits deep within my soul.

Father’s have such an important role in the lives of their children. In our home my husband gives me butterflies as I watch him play baseball with our sons, teach them how to play tennis,  pray over them and kiss and tuck them in their beds every night. Fathering matters. Today had it’s own dose of magic as I spent the day with my dad, and with my husband who fathers our sons and with my husband’s father.bestdad6.jpg

In case you’re wondering what else was on the menu for brunch I will tell you that I made my homemade pancakes (recipe here) as well as a few French toast casseroles. My mother whipped up an amazing egg scramble, baked chicken drumsticks, freshly steamed vegetables, bacon, sausage and the kicker was the sea bass!bestdad2-2609978605-1529282199198.jpgbestdad4.jpg

The ladies- especially my mom  worked super hard to pull of this Father’s Day Brunch Extravaganza and we wore chef’s hats and aprons to prove it! bestdad7So before I give my quiche recipe- I’ll give one for parenting especially as it relates to fathering. Just be there and pursue your kids even when they push you away. I wasn’t a happy camper about that 10pm curfew- or about a lot of my parents rules but my parents loved me by getting in my business, supporting me and putting their foots down anyways. I’m so glad they did.

INGREDIENTS: 

  • 2 Disks of pie crust (store bought or homemade)
  • 1 bag (28 oz) of frozen Obrien Potatoes
  • dried thyme leaves
  • 2 bellpeppers
  • 1 small onion
  • 24 eggs
  • 1 cup of heavy whopping cream
  • 6 slices of pepper-jack  cheese
  • 1/2 cup of grated sharp cheddar cheese

DIRECTIONS:

  • Spray a large ceramic, glass or aluminum baking dish with cooking spray and then cover it with the pie dough. If you use store-bought pie dough fold it in half and lay it on a floured surface and knead it some more to make it longer so it will completely cover your baking dish- you’ll need two disks.
  • Next pour in the Obrien potatoes in the baking dish, sprinkle them with garlic salt and dried thyme leaves and set aside.
  • Dice the onions and bell pepper and sauté them in a large skillet with olive oil for about 5-7 minutes then spread them evenly on top of the potatoes.
  • Lay the pepper-jack cheese sliced on the potatoes.
  •  Scramble the eggs with the cup of heaving whipping cream and season with salt and a dash of poultry seasoning. Pour the egg mixture into the baking dish and evenly sprinkle the sharp cheddar cheese across the top.
  • Now- you can make this dish ahead and covering it with foil and then baking it on the day of your brunch. I do this because the more you can get done ahead of time anytime your hosting an event the better and less stress. Or you could bake it right away. If its frozen preheat your oven to 400 degrees and bake for an hour and fifteen minutes to and hour and a half or until the entire quiche is firm. If you bake it fresh bake it on 375 degrees for 45 minutes to an hour.
  • OPTIONAL:  Use alphabet cookie cutters to make a special message. Bake the letters separately on  a baking sheet and on 350 degrees for 5-7 minutes and put them on top of the quiche for the last ten minutes the quiche is baking. If you place the letters on the quiche to bake with the quiche they will sink .
