This weekend I hosted a brunch and book club for some sweet mama-friends discussing Paul Tripp’s book, “Parenting!” We shared our takeaways from the book as well as hilarious stories about our parenting struggles. There were snorts of laughter and “cheers,” from cups of coffee and orange juice glasses to celebrate each other’s success in life and victories in parenting.parentingbrunch2 There was a sweet sisterhood of praying, devoted, transparent mamas cheering each mother on!  I think we all walked away with a greater understanding of our role as parents as being less concerned about raising perfect kids but instead being willing vessels God is using to raise kids for His kingdom! We walked away with an assurance that the same God who called us to the task will lovingly and graciously bring us through the amazing call to parent the children He’s entrusted to our care. parentingbrunch1 We probably also walked away 3-5 pounds heavier LOL! But seriously! I wanted to share with you all about the decadent Bundt cake French toast I served up!bundtcakefrenchtoast2Yes that’s syrup drizzling on it!! ;-O …. I also made slab quiche with the cherry tomatoes and herbs from the garden! cherrytomatoe-herbedslabquicheBut back to the French toast! French Toast is pretty much a staple on my brunch menu! I’ve served it up as a cupcake topped with cream cheese icing . I’ve also sliced it up in a Pyrex dish and served it as a casserole!  If it’s just my family I will sit there and fry pieces of French toast in a skillet on a Sunday morning. But I needed to bring some newness to my staple recipe so I got the idea to stuff mini-Bundt cake pans with cubes of Texas toast and French toast batter. frenchtoastprepIt was miraculous! You should try it too!!! The best part is that you can prepare your French toast cakes overnight and cover with foil and bake in the morning to save time. Just cube your favorite bread for French toast, and put the bread cubes in greased mini Bundt cake pans, pour in your French toast recipe, cover with foil while refrigerating overnight and bake in the morning! I then sprinkled a generous portion of powdered sugar on top and served with berries. Please try this at your next brunch gathering and leave a comment or tag me in your creation on Instagram!   1. I was blessed to be there and happy to meet other sisters in Christ. And yes I definitely walked out of there feeling amazing, revived prayed iver and 3lbs heavier…..lol
