Hi there ladies. It’s Portia wishing you all a blessed and happy Mother’s Day weekend! A few of my Instagram friends and I got togther and put a Proverbs 31 Woman spin on the popular #dontrush challenge. Please check it out here.

In our video we are highlighting the daily tasks and roles of motherhood as a supportive husband steps in to give mom a break because it’s Mother’s Day. Honoring her with flowers the moms are instantly transformed into put-together mamas with well behaved children LOL! Please feel free to share this with a fellow mom who could use a good chuckle.

In real life, there’s often not enough breaks or magic that take you from the hard tasks at hand to a put-together woman with appreciative offspring. Motherhood is a high calling. It’s sacred , holy work and a gift from God🙏🏾Us moms are referee, nurse, housekeeper, teacher (specializing in ABCs & 1,2, 3s), chef, personal driver, search & rescue (for lost toys), birthday planner and expert in all family &special events, stain removal expert, co-pastor, therapist and the list goes on and on! So mama, when you’re exhausted and want to throw in the towel- remember the mundane has meaning. You are raising the next generation. And you don’t have to bear the weight of doing this task alone- take comfort God offers us his partnership. He will help us do it.

Let the words of the great proverb paint a picture for you of the beautiful hope we have in Christ. Proverbs 31:25: “She is clothed with strength and dignity and she can laugh at the days to come”. You may not feel like laughing now, but we can have joy about what’s ahead because of Jesus.

Mother’s Day Pancakes

I also want to switch gears a bit and talk about the featured image for today’s blog post.

MOM pancakes

I did not make those pretty pancakes. So for the last three weekends Errol has been using my pancake recipe to make breakfast for us to give me a break. He has seen me make words out pancakes in the past and today he tried the technique himself to spell , “MOM”. You can forward this post to whoever’s in charge of Mother’s Day tomorrow and have them watch his tutorial and try it out HERE. This was his first time trying it and he did such a great job while holding the baby.

Portia’s Pancake Recipe

Ingredients

  • 1 cup all purpose flour
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1 egg
  • 1 tbsp pure vanilla extract
  • 1/2 stick melted butter

Instructions

  • In a medium-size bowl, whisk together all the dry ingredients
  • In a large bowl whisk together all the wet ingredients
  • Pour the dry ingredients into the bowl of wet ingredients and whisk together until ingredients are thoroughly combined
  • Grease a griddle with cooking spray and bring the meat to medium. Transfer batter into a Pyrex measuring cup and pour medium sized circles on pancake batter onto the griddle. Flip when the batter begins to butter. Allow to cook on the other side for 30 seconds then transfer to a plate.
  • Serve warm with maple syrup and butter.
